It's been a while!

Yeesh, I sure know how to fall off the blogging wagon!  Here's a quick post about the most wonderful way to prepare steel cut oats, if you are like myself and don't really like oatmeal all that much, AND like your breakfast savory, not sweet!

Savory Steel Cut Oats: Adapted from The New York Times and Mark Bittman

Serves 2 large portions
Ingredients
1/2 cup steel cut oats
1 cup water
1 cup milk
1/2 tsp salt
small bunch scallions, chopped
4 mushrooms, chopped
2 large eggs
butter
1-2 Tbsp soy sauce

Bring water, milk, and salt to a boil, add oats, stirring.  Reduce heat to medium low, and simmer for 15 minutes, covered, stirring occasionally to keep oats from sticking to sauce pan.  Add soy sauce and small pat of butter, cover and simmer another 10-15 minutes til oats have thickened to desired consistency.  Meanwhile, saute the scallions and mushroom until just tender, stir into oatmeal when it is done.  Fry 2 eggs over easy.  Serve oatmeal in two bowls, top with eggs, and more chopped scallions if desired.  Super yummy breakfast, and would also make an excellent dinner!
