A very exciting weekend ahead of us. Tomorrow morning, Kevin will be graduating from UW! He has worked really hard the last couple of years, and will be graduating at the top of his class in the Civil Engineering department. I am so proud of him for going back to school and working towards a degree that he is excited about, and I can't wait to whoop and holler when his name is called tomorrow!

Also very exciting, Kevin accepted a position as a hydraulic engineer today! He has been looking for a few months, and found a job that looks like it will be a perfect fit for him! We are feeling very excited and relieve and are ready to celebrate his successes! Tomorrow evening we will be gathering up our families on the island to party down!
In celebration, yesterday we decided to make chicken enchiladas, one of Kevin's favorite meals. (Mine, too!) Here is how we do it:
Buy a whole chicken, and roast it. Carve it, then when it has cool, pick the dark meat and shred into small pieces.

Dice a red onion finely. Grate 10 ounces of cheddar cheese.

Spread 1/3 of a can of green enchilada sauce in the bottom of a 9x13 inch pan. Soften 12 corn tortillas in a little bit of oil in a skillet, being careful not to fry them! Do these one at a time, and fill and roll with cheese, meat, and onion.

Spread rest of enchilada sauce over the top, then scatter any remaining cheese, chicken, and onion mixture on top. Finally, top with a bunch of chopped cilantro. Bake for 30-40 minutes at 350 degrees.

But Woohoo! Graduated! And Job! And I get the rest of June and July off!
